KETO CHOCOLATE MOUSSE

KETO CHOCOLATE MOUSSE – A sweet option for one of those days. It’s really simple to make, you’ll just need patience, and preferably make it one night before so you can have it for breakfast or as a snack during your next day. Remember that you can modify the portions in case you want to make it sweeter (adding more steviaI’m Im more of a «dark chocolate» woman, but I know the majority prefers sweet chocolate. So, let’s start:

You will need:

2 small spoons of chia
100ml unsweetened almond milk ( or soy )
7g unflavored gelatin
Stevia (I’m letting this decision to you, but maybe 1 packet will be ok)

Steps to follow:

1. In a mason jar (preferably with a lid) or a glass of your preference (you are gonna need to cover it up and put in on the fridge for a while), add the milk and the chia seeds, mix it with a fork, cover the top of the glass and let the chia seed expand for at least 2 hours on the fridge.
2. Meanwhile, open the gelatin package and start whisking the powder on a small bowl with warm water. Stir until everything dissolves. (do not boil). Set aside and let it cool naturally for about 15 min.
3. After the 2 hours, you are gonna blend (on your bulletproof or blender) the mixture of milk and chia seeds until smooth. Then, add the gelatin water, the stevia, and the cocoa powder to the blender and blend everything.
4. Serve on the dish you’ll want to enjoy your mousse later, cover with plastic or with a lid and let it cool for another hour or two in the fridge.
5. Add your toppings of preference. I grated some 85% chocolate and added a little of full fat-no sugar whipped cream.

KETO CHOCOLATE MOUSSE – Una opción dulce para uno de esos días con antojo. Es muy simple de hacer, solo necesitarás paciencia, y de preferencia prepáralo una noche antes para que puedas diafrutarlo para el desayuno o como una colación para el día siguiente.

Recuerda que puedes modificar las porciones en caso de que quieras hacerlo más dulce (agregando más stevia) Yo soy más de «chocolate amargo», pero sé que la mayoría prefiere el chocolate dulce. Entonces, comencemos:

Necesitarás:

2 cucharadas pequeñas de chia
5 g de cacao (utilicé 100% cacao natural de Hershey)
100 ml de leche de almendras sin azúcar ó de soya
7g de grenetina sin sabor
Stevia (Te dejo esta decisión, pero quizás 1 paquete esté bien)

Pasos a seguir:

1. En un frasco estilo «mason jar» (preferiblemente con una tapa) o un vaso de tu preferencia (tendrás que cubrirlo con plastico y ponerlo en el refrigerador por un tiempo), agrega la leche y las semillas de chía, mezcla con un tenedor, cubre la parte superior del vaso y deje que la semilla de chia se expanda durante al menos 2 horas en el refrigerador.
2. Mientras tanto, abre el paquete de grenetina y comienza a batir el polvo en un tazón pequeño con poquita agua tibia/caliente. Revuelve muy bien hasta que todo se disuelva. (no hervir). Ponlo a un lado y deja que se enfríe naturalmente durante unos 15 min.
3. Después de las 2 horas, mezclarás (en tu licuadora) la mezcla de leche y semillas de chia hasta que quede uniforme. Luego, agrega el agua de gelatina, la stevia y el polvo de cacao a la licuadora y licúa todo.
4. Sirva en el plato donde querrás disfrutar tu mousse más tarde, cúbrelo con plástico o con una tapa y déjalo enfriar durante una o dos horas más en el refrigerador.
5. Agrega los toppings de preferencia. Yo rallé un poco de 85% de chocolate y le agregué un poco de crema batida sin azúcar.
