These Low Carb / Keto chocolate muffins are so good you won’t believe they only have 3g of net carbs each, besides, they only have 100 calories! What? «Give me a dozen!» (my inside voice).
UPDATE: I made two versions, the first one using Coconut Flour and the second one with Almond Flour (see the end of this post for specifics).
Ingredients for 7 muffins approx:
· 4 Eggs
· 100ml Unsweetened Almond Milk
· 1 Tbspoon of butter
· 56g Organic Coconut Flour
· 15g Hershey’s Cocoa
· 10g Coconut Oil
· 1/8 cup Sugar-Free Syrup (you can skip this and add a little bit more of milk)
· 1 Protein Scoop, low in carbs (Whey Vanilla, Gold Standard)
· 8g stevia (I used 2 packets of Super Life Plus)
Steps to follow:
(preheat your oven to 175ºC)
1. Whisk the eggs, add the liquid ingredients as well (melted coconut oil, milk & syrup)
2. Blend everything until smooth. If you notice your mixture very dense, add a bit more of milk.
3. In a muffin tray, add your paper molds or grease with butter/oil the mold before serving the mixture.
4. Place your muffins inside the oven or your electric oven and put on time for 2o minutes, check them with a toothpick until it comes out clean.
5. After they cooled down on room temperature, you can add your favorite toppings like; peanut butter, strawberries, full fat whipped cream or just enjoy them like that.
6. Refrigerate them inside a sealed Tupperware or Ziploc for better conservation.

Estos muffins de chocolate bajos en carbohidratos / cetogénicos son tan buenos que no creerás que tienen solo 3 g de carbohidratos netos cada uno, además, solo tienen 100 calorías! ¿Qué? «¡Dame una docena!» (mi voz interior).
ACTUALIZACIÓN: Hice dos versiones, la primera con harina de coco y la segunda con harina de almendras (ver el final de este post para detalles).

· 1 porción de proteína en polvo baja en carbs (Whey Vanilla, Gold Standard)

Pasos a seguir:
(Precaliente su horno a 175ºC)
1. Batir los huevos, agregar los ingredientes líquidos también (aceite de coco derretido, leche y jarabe)
2. Mezclar (a mano o en la licuadora) todo hasta que quede suave. Si nota que su mezcla es muy densa, agregue un poco más de leche.
3. En una bandeja para muffins, agregue sus moldes de papel o engrasa con mantequilla / aceite el molde antes de servir la mezcla.
4. Coloque sus muffins dentro del horno o su horno eléctrico y revísalos a los 2o minutos. Verifíquelos con un palillo hasta que salga limpio.
5. Después de que se enfríen a temperatura ambiente, puede agregar sus ingredientes favoritos como; Mantequilla de maní, fresas, crema batida entera o simplemente disfrutarlas así.
6. Refrigérelos dentro de un Tupperware sellado o Ziploc para una mejor conservación.

9g protein
3g net carbs
5g fat

USING ALMOND FLOUR:
Use your favorite toppings in the mix like; sliced almonds or dark chocolate.

90 calories
5g protein
2g net carbs
7g fat
