I’ve been experimenting with ingredients for the last weeks to make the perfect keto / low carb pancakes, and I made these the other day with Coconut Flour and I loved them. They were fluffy, tasty and very easy to make. You will be seeing more recipes here as soon as I try more and more options. (yes, I love pancakes). This recipe serves two, if you are making pancakes for a larger crowd, just double the portions.
You will need the following:
- 21 g Organic Coconut Flour (If you are using almond flour, you’ll need 60g)
- 2 eggs
- 1/2 tablespoon of butter
- 1/2 scoop of whey vanilla gold std (or your favorite low carb protein powder)
- 100ml light soy milk
- a hint of vanilla extract
- cinnamon to taste
- 1/2 tablespoon baking powder
Instructions:
- In a blender (or manually if you prefer) mix the eggs, the milk and the rest of the ingredients. (coconut flour absorbs a lot, if you notice your mixture very solid, add more milk)
- Let the mixture sit for a couple of minutes while you heat your pan.
- Start making your pancakes. I made mine small, approx 9cm each.

Esta receta sirve a 2, si estás haciendo hotcakes para una multitud más grande, solo duplica las porciones.
Necesitarás lo siguiente:
- 21 g de harina de coco orgánica (si estas usando harina de almendras, necesitarás 60g)
- 2 huevos
- 1/2 cucharadita de mantequilla
- 1/2 scoop de whey vanilla gold std (o tu polvo favorito de proteína baja en carbohidratos)
- 100 ml de Leche de soja light
- un toque de extracto de vainilla
- canela al gusto
- 1/2 cucharadita de polvo de hornear
Instrucciones:
- En una licuadora (o manualmente si lo prefieres) mezcla los huevos, la leche y el resto de los ingredientes. (La harina de coco absorbe mucho, si notas que tu mezcla es muy sólida, agrega más leche)
- Deja reposar la mezcla durante un par de minutos mientras calientas el sartén.
- Empieza a hacer tus pancakes. Hice la míos pequeños, aproximadamente 9cm cada uno.
