Vegan Stew

Cada semana preparo papita en salsa, pero en esta ocasión quise agregarle un poco más de ingredientes al guiso. Este platillo es completamente vegano y lo puedes preparar fácilmente en casa. Te comparto esta receta super rica y sencilla. / Every week I make potatoes in tomato sauce, but this time I wanted to add a little more ingredients to the stew. This dish is completely vegan and you can easily prepare it at home.

INGREDIENTES / INGREDIENTS:

– Papa / Potatoes
– Garbanzos / Chickpeas
– Cebolla / Onion
– Tomates (3-4) / Tomatoes
– Chile Serrano / Serrano Pepper
– Elote / Corn
– Quinoa
– Ajo y Especias / Garlic and Spices
– Limón / Lemon

PREPARACIÓN / PREPARATION:

1. Lava todas las verduras y corta en cuadritos la cebolla y la papa. / Wash everything, chop the onion and the potatoes.
2. En una olla con poquito aceite vegetal (de coco o el que gustes) coloca la cebolla, los garbanzos y el elote. Condimenta al gusto y déjalo a fuego lento. / In a pot with a little vegetable oil (coconut for example) place the onion, chickpeas and the corn. Spice to your liking and leave it in low heat.
3. Deja las papas en cuadritos en un recipiente hondo con agua unos 10 minutos. / Leave the chopped potatoes in a deep bowl with water for about 10 minutes.

4. Mientras, prepara la Quinoa en otra olla con agua. Por cada taza de quinoa agrega 1 taza y media de agua. Déjalo a fuego lento y tapado por 10 minutos aproximadamente, apaga y deja reposar por otros 5 minutos. /  Meanwhile, prepare the Quinoa in another pot with water. For each cup of quinoa add 1 cup and a half of water. Let it simmer and cover for 10 minutes approximately, turn off and let stand for another 5 minutes.

5. LA SALSA – Si gustas puedes pre calentar un poco los tomates, la cebolla y los chiles, meterlos a la licuadora, condimentar y licuar. (Al final se vertirá la salsa en la olla con el resto de los ingredientes) / SALSA – If you like you can preheat the tomatoes, onion and chiles for a little bit, put them in the blender, season and blend. (At the end the sauce will be poured into the pot with the rest of the ingredients)

6. Agrega a la olla las papitas, condimenta al gusto y revuelve. Exprime medio limón. Cuando las papitas estén listas puedes separar un poco en un recipiente para tener un guisado sin salsa. / Add to the pot the potatoes, season to taste and stir. Squeeze half a lemon. When the potatoes are ready you can separate some in a bowl to have a stew without sauce.

7. Agrega la salsa en la olla, revuelve y déjalo en fuego lento unos 7 minutos. / Add the sauce to the pot, stir and simmer for about 7 minutes.

8. Agrega a la olla unas 2 cucharadas grandes de quinoa y mezcla. Déjalo unos 5 minutos mas. / Add to the pot about 2 large tablespoons of quinoa and mix. Leave it for 5 more minutes.

9. Yo le agregué dos cucharadas de Levadura Nutricional (fuente de vitamina B)  a la olla. / I added two tablespoons of Nutritional Yeast (source of vitamin B) to the pot.

10. Con estos pasos hemos terminado, ya puedes servirte y acompañarlo con aguacate, tortillas, tostadas o como prefieras comerlo. / With these steps we are finished, you can serve and accompany with avocado, tortillas, toast or as you prefer to eat it.
